Once I start getting the grilled fired up for the season, one of my favorite meals to prepare is kebabs. It’s the perfect simple meal that can offer a little something for everyone. I can even get my kids to eat a few veggies they might otherwise shun; grilled onions have a sweetness to them that raw do not!
Despite the delicious marinade I’m going to share, I *still* couldn’t win them over on the shrimp we grilled. Expecting this, of course, I also made some chicken. I used the marinade just for the protein, and let the vegetables stand on their own with just a little seasoning and olive oil.
Please keep in mind when grilling that meats and vegetables cook at different speeds. It is safest to keep your proteins separate, and don’t use any marinade that’s had raw meat/seafood in it on other foods!
I happened to have honey mustard on hand, but if you don’t you could simply use separate honey and dijon mustard for this marinade. My kids loved the chicken, which had a sweetness to it from the honey, but also just the tiniest bit of zip from the garlic and mustard.
The kids had a little bread alongside their dinner, but other than that I didn’t serve up any starches. Sometimes in the summer I will cook some quinoa, which makes a nice bed for the grilled vegetables and protein.
Lemon, Garlic & Honey Mustard Marinade
juice of 2 lemons
zest of one lemon
4 tbs. honey mustard
2 large garlic cloves, minced
salt and pepper, to taste
1/3 cup olive oil
Combine lemon juice through garlic in a small bowl. Gradually pour in olive oil (the amount I used was approximate). Season with salt and pepper.
