Paleo Banana Porridge

We have officially reached the time of year when I hit my cut-off point for having smoothies for breakfast. I just can’t stomach slurping down something frozen when there’s actual frost on the ground outside. Instead I tend to turn to paleo mug muffins and other grain-free alternatives to traditional warm breakfast foods.

I like this easy porridge recipe from Comfy Belly for a number of reasons. First, it contains no added sugar due to the natural sweetness of the banana. It’s also nut-free, which is a rarity in paleo hot cereals and porridges. Finally, it comes together quickly (no food processor or blender required!) and can be topped off in a number of ways.

This morning I sprinkled some almonds and cinnamon on top, and also stirred in a little chocolate hemp protein powder before eating. Dairy-free mini chocolate chips are a fun addition, and if you do nuts I think chopped walnuts are the perfect companion to banana. I have also stirred a little almond butter into it for flavor and body as well.

The base recipe, however, is not only nut-free but dairy, gluten and grain-free too. Super easy and comforting breakfast that will help you warm you up on chilly wintry mornings!

Paleo Banana Porridge

1/2 cup coconut milk or other unsweetened non-dairy milk
1/2 cup water
1/4 cup coconut flour
1 very ripe banana, mashed
1/2 tsp.  ground cinnamon
1/4 tsp. salt
2 large eggs, lightly beaten
toppings of choice

Place the coconut milk and water in a saucepan over medium-low heat. Add the coconut flour to the saucepan and stir to blend.

Add the mashed banana to the saucepan and stir to blend. Add the cinnamon and salt to the saucepan and blend well. Add the eggs to the saucepan and blend. Stir occasionally for a few minutes, or until the porridge becomes thick and a bit lumpy.

Serve immediately with toppings of choice. I find this recipe yields enough for two servings.
