Vegan and vegetarians forgive me… Whole Foods had some amazing boneless pork chops on special, and I’m using them for dinner both tonight and tomorrow. Tonight’s recipe has a bit of kick, so I would definitely suggest it for a kid-free meal (or omit the hot pepper).
I’ve liked Guy Fieri since he became the first winner of Next Food Network Star, as he cooks unpretentious food with big flavors. I would never have come up with Watermelon Pork Tacos on my own; the meal was easy to prepare and combines a ton of contrasting flavors that all taste amazingly fresh and delicious together. Crisp cucumber, creamy avocado and sweet watermelon are the perfect foil for the zingy marinade on the pork.
Since I avoid gluten I loved the use of lettuce wraps here, but soft flour tortillas would work too. I used jalapeno rather than serrano peppers for the pork marinade to make it a bit less spicy.
Other than adjusting the spice factor I also lightened things up a little by using only 1/2 of the olive oil sauce on the salsa, as well as gluten-free, low sodium soy sauce.
Even if you don’t do pork, I highly recommend this easy, Asian-influenced take on salsa. It would work extremely well with many vegetarian dishes, and I’m already imagining pairing it with some simple grilled fish.
