Instant Pot Pizza Soup

My son doesn’t like tomato soup, so when he saw me ladling out last night’s dinner he quite promptly reminded me of this fact. This is no ordinary tomato soup, however, as it’s loaded with pizza flavor (especially when you finish it off with your favorite toppings!). Thanks to my Instant Pot I had this on the table in just about a half hour, yet it tasted like it had simmered for hours.

If you’re vegetarian, just skip the sausage and up the vegetables. For a dairy-free option, use Daiya shredded mozzarella or just omit the cheese. While we kept things simple with only black olives and a swirl of pesto to garnish, the sky is the limit in terms of pizza-inspired toppings and/or stir-ins.

If you’d like to make this in a crock pot rather than an Instant Pot, simply brown the sausage (or meat of choice) on the stove top before adding it with the rest of the ingredients. I would suggest cooking on low for 8 hours or high for 4 to really maximize the flavor.

As written this recipe is grain, gluten and optionally dairy-free.

Instant Pot Pizza Soup
adapted from 365 Days of Crock Pot

1 lb. Italian sausage, casings removed
1 small diced onion
1 medium diced red or green pepper
4 minced garlic cloves
1 tsp. dried Italian seasoning
1 tsp. dried oregano
salt & pepper, to taste
1 tbs. palm or organic cane sugar
28 oz. canned crushed or diced tomatoes
2 cups organic tomato or pizza sauce
3 cups organic chicken broth
2 tbs. arrowroot starch
2 tbs. water
2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
toppings of choice, such as sliced black olives, pesto, chopped bell pepper, sliced mushrooms, minced fresh basil, chopped nitrite-free pepperoni

Turn Instant Pot on to saute mode. Add sausage to pot, breaking up with a wooden spoon. Once sausage is starting to brown, add onion and red pepper. Cook until sausage is browned. Drain any excess grease and add garlic, seasoning, sugar, tomatoes, sauce and broth to the pot.

Put lid on pot and make sure it and pressure valve are sealed. Press “manual” and set for 5 minutes. Once the cooking is done, carefully release pressure valve.

Mix arrowroot and water in a small bowl. Open Instant Pot and stir a little of the hot soup into the starch mixture. Stir back into Instant Pot and return to saute setting.

Stir in half of the cheeses and allow to cook for about 1 minute until cheese is melted.

Taste soup for seasoning and serve with pizza toppings of your choice.
