When the forecast high is a whopping 10 degrees, it’s simply not the time for smoothies to start the day. I’d much prefer something warm and cozy, but on most weekday mornings I sometimes struggle to have enough time to even finish my coffee while it’s still hot.

This recipe that I adapted from The Paleo Running Momma is the perfect solution, as it yields multiple servings and is easy to tweak with different nuts and fruit. I’ve made it with pears and many different combinations of seeds and nuts. This time I used cashews and walnuts and it was the perfect way to kick off this week’s freezing cold mornings!

As written this recipe is grain, gluten and dairy-free. It’s naturally sweetened by fruit and raisins, and you can dial down the sweetness by using fewer raisins or omitting them altogether. You could also make the dish nut-free by using only seeds and coconut milk.

Paleo Hot Apple Cinnamon Cereal

1 tbs. coconut oil
1 medium apple or pear, peeled and diced
3/4 cup mixed raw nuts and/or seeds
pinch of sea salt
1 1/2 tsp. ground cinnamon
1/4 cup raisins
1/4 cup shredded coconut
1 cup unsweetened almond or coconut milk

Melt coconut oil in a large pot over medium heat. Add apple and nuts and sprinkle with a little salt. Cook until apple just begins to soften, about a minute.

Add remaining ingredients and reduce the heat to low.

Stir and then raise the heat again, allowing the mixture to come to a low boil. Put a lid on the pot, lower the heat and simmer for about 5 minutes.

Serve hot as is or topped off with a little more milk or other toppings of choice. This recipe yields enough for 4 chilly mornings!
